Abstract: The discoloration mechanism of dried flowers is the key factors determining the quality.In this paper, some factors causing discoloration of dried flowers were discussed.Such as temperature, pH, metal affect, browning, bleaching etc.The discoloration mechanism of the dried flowers were Summaried.And the theory provided references for dried flowers＇ production in the future.
