摘要: [目的]通过不同方式处理缫丝蚕蛹,探索改善缫丝蚕蛹品质的方法。[方法]采取碱处理、酸中和、添加抗氧化剂的4种不同组合处理方式对缫丝蚕蛹进行试验,并通过测定缫丝蚕蛹挥发性盐基氮和过氧化值评价4种方法的效果。[结果]10%碳酸钠处理、5%盐酸中和、添加(0.5%没食子酸丙酯+0.1%异抗坏血酸钠)抗氧化剂组合处理方式能显著降低桑蚕蛹的TVBN值和POV值,能有效抑制蛋白质分解、脂肪氧化,从而改善缫丝蚕蛹品质。
Abstract: [Objective] The research aimed to discuss the method of improving the quality of reeling silkworm chrysalis by treating reeling silkworm chrysalis by different ways. [Method] Reeling silkworm chrysalis were treated by four different combined treatment methods of alkali treatment, acid neutralization, adding antioxidants to determine the volatile basic nitrogen and the peroxide value of reeling silkworm chrysalis. And the effects of four methods were evaluated. [Result] 10% sodium carbonate treatment, 5% hydrochloric acid neutralization,adding antioxidant combinations (0.5% propyl gallate and 0.1% sodium erythorbate) could significantly decrease TVBN and POV values of reeling silkworm chrysalis, effectively inhibit the protein catabolism and fat oxidation, so as to improve the quality of reeling silkworm chrysalis.
