摘要: 目前,虽然养兔业在畜牧业中所占比重小,但由于兔肉富合营养,具有保健功能,因此,肉兔产业已经在世界许多国家得到较快的发展。而且必将受到更多消费群体的重视和青睐。主要介绍了兔肉生产和加工现状,分析其中存在的问题,并展望了兔肉生产及加工发展趋势。

Abstract: At present, rabbit keeping accounts for smallproporti~n in animal husbandry, but rabbit meat is full in nutrition and has health function, so rabbit meat industry has been fast developed in many countries and paid attention by more and more consumers. The present situation in the production and procession of rabbit meat were discussed, and the problems of them were analyzed. Prospect and development of rabbit production and processing were also mentioned.
