Research Progress in Calpain System Gene and Its Association with Meat Tenderness

Abstract: Calpain system is composed of calcium-activated neutral protease Ⅰ(μ-calpain,calpain 1,CAPN1),calcium-activated neutral protease Ⅱ(m-calpain,calpain 2,CAPN2) and calpastatin(CAST).Calpain activity affects muscle growth and meat tenderness in animals.The paper reviews character and action mechanism of calpain system genes as well as their effect on meat quality.And their potential applications were also discussed.
