Abstract: Fruits and vegetables have the main characteristics on strong seasonal growth, high water content, not resistant to storage, eating while it is fresh etc. In preservation methods of fruits and vegetables, the nutrition and flavor quality of fruits and vegetables could be kept best with the method of controlled atmosphere storage, with little influence on sale and economic value. In this paper , the characteristics of controlled atmosphere and cold storage of fruits and vegetables was compared to summarize the advantages of controlled atmosphere storage.
