昭乌达肉羊肉用性能和肉质特性研究

Slaughter Performance and Meat Quality of Zhaowuda Meat Sheep

摘要: 昭乌达肉羊是内蒙古赤峰市经多年努力培育出的具有区域特色的优质肉用新品种。对昭乌达肉羊羯羊、蒙古羯羊进行了屠宰试验,以比较其肉用性能和肉品质特性。结果表明,昭乌达肉羊和蒙古羯羊屠宰率分别为57.79%和44.32%,净肉率为71.08%和65.75%。昭乌达羯羊的屠宰率和胴体产肉率等各项指标均极显著高于蒙古羯羊(P〈0.01)。肉品质测定结果,昭乌达肉羊与蒙古羯羊剪切力值差异不显著。昭乌达肉羊的肌肉脂肪含量在3%~4%之间,蛋白质含量高于20%,羊肉所含的各种必需氨基酸在理想蛋白质指标中均占50%以上,赖氨酸和组氨酸超出了理想蛋白质指标。昭乌达肉羊的肌肉中,鲜味氨基酸的含量均显著高于蒙古羯羊(P〈0.05)。2个品种羊的脂肪酸组成基本一致,都是以油酸、硬脂酸、棕榈酸为主,在2个肉羊品种的亚油酸及亚麻酸含量中,昭乌达肉羊显著高于蒙古羯羊(P〈0.05)。昭乌达肉羊不仅口感良好,而且具有较高的营养价值。

Abstract: Zhaowuda meat sheep is a new variety of meat sheep bred in Chifeng City through years of efforts.The slaughter performance and meat quality were compared between Zhaowuda sheep and Mongolia wether after slaughter.The results showed that the dressing percentages of Zhaowuda sheep and Mongolia wether were respectively 57.79% and 44.32%,and their carcass meat rates were respectively 71.08% and 65.75%.The slaughter rate and carcass meat rate were significantly higher in Zhaowuda meat sheep than in Mongolia wether(P0.01).The analysis on meat quality showed that the shear strength had no significant difference between Zhaowuda sheep and Mongolia wether.The Zhaowuda meat sheep had intramuscular fat content of 3%-4% and protein content higher than 20%.The contents of necessary amino acids accounted for more than 50% of the ideal protein standard,and the contents of lysine and histidine were higher than the ideal protein standard.The content of flavor amino acids in muscle was significantly higher in Zhaowuda meat sheep than in Mongolia wether(P0.05).They had similar composition of fatty acids,mainly oleic acid,stearic acid and palmitic acid.The contents of linoleic acid and linolenic acid were significantly higher in Zhaowuda meat sheep than in Mongolia wether(P 0.05).Therefore,Zhaowuda meat sheep have good flavor and high nutritional value.
