Research progress on quinoa nutrient components and their development and application

Abstract: Quinoa has multiple health effects such as antioxidant,anti-cancer,anti-allergy,sugar control,lipid regulation,cardiovascular and cerebrovascular protection,etc.Quinoa is a multi-grain food with full nutrients,high biological activity and multi-health functions,and has a large development space. This paper reviews the protein,amino acids,unsaturated fatty acids such as linoleic acid and linolenic acid,complex vitamins such as vitamin B2,vitamin B6,and folic acid,minerals such as Mg,Zn,and Fe,and bioactive substances such as polyphenols,flavonoids,saponins,and polysaccharides in quinoa,and analyzes other functions and development prospects of quinoa. And put forward the scientific and technological research suggestions of quinoa in the big health industry.
