摘要: 随着现代科学技术的飞速发展,现代生物学技术已经发展到后基因组时代,生命科学研究的重点也从结构基因组研究转移到后基因组时代——功能基因组的研究。蛋白质组学研究是功能基因组一个重要的组成部分,与之相关的技术也得到了迅速的发展,并且在多个领域都得到了相应的发展。综述了蛋白质组学相关技术的发展及其在肉质中应用的概况。

Abstract: With the rapid development of modern science and technology, modern biology technology has entered into the post-genomics period, and the emphasis of life science transfer from instruction genome to the post-genomics period, that is functional genome. Proteomics is an important part of functional genome, and the related technology has been developed rapidly and applied in many fields. The technology of proteomics is advanced day by day. The development of proteomics technology and its application in meat quality were overviewed in the paper.
