Determination of Trace Ammonia in Fish by Phenol- sodium Hypochlorite Spectrophotometry

摘要: 鱼肉中氨含量的检测可用于鱼肉新鲜度检验。在碱性条件下,以常温下NH,在亚硝基铁氰化钠的催化下与酚一次氯酸钠作用生成稳定的蓝色化合物,最大吸收波长为620nm,最适显色时间为20min,最适显色温度为37℃,相对标准偏差为1.5%(n=10),回收率在96.7%~101.5%之间。该方法具有简便、快速、相对准确等特点。

Abstract: The determination of ammonia content in fish could be used in the freshness test of fish. Under alkaline conditions, NH3 reacted with phenol-sodium hypochlorite at normal temperature under the catalysis of sodium nitroferricyanide to produce stable blue chemical compound. The maximum absorption wavelength was 620 nm,the best color time was 20 min and the best color temperature was 37 ℃, relative standard deviation was 1.5% (n=10). And the recovery rate was 96.7%-101.5%. This method was simple, rapid and accurate.
