Investigation on Main Bacteriological Indices of Pig Carcass

Abstract: Based on the criteria of national standards,20 surface samples of pig carcass and 20 meat samples of pig carcass from a fixed-point pig slaughterhouse were collected for detecting total number of bacterial colony,coliform bacteria,Salmonella spp.,Staphylococcus aureus.The results demonstrated that the over-standard rates of the total number of bacterial colony and coliform bacteria on the surface of pig carcass were 20% and 5% respectively.The over-standard rates of the total number of bacterial colony and coliform bacteria in meat samples of pig carcass were 5% and 0 respectively.The detection rates of Salmonella spp.on the surface of pig carcass and in meat samples of pig carcass were 5% and 0 respectively.And Staphylococcus aureus was not detected in both carcass surface and meat samples.The results showed that the qualification rate of hygiene quality in this slaughterhouse was relatively higher.But it is necessary to further enhance the levels of slaughter production and processing.
