Comparison of Quality of Different Varieties Eggs and Energy and Content of Sex Steroid Hormones of Their Yolk

Abstract: The rural free-ranging chicken eggs from Suichang County, saled native eggs in bulk and fresh eggs were used as materials to compare their quality, energy and content of sex steroid hormones in yolk. The weight of eggs, dry-wet weight of yolk, energy and the contents of testosterone, dihydrotestosterone and estradiol in yolk of different varieties eggs were determined respectively. The weight of saled native eggs and general fresh eggs were significantly higher than that of rural free-ranging chicken eggs (P〈0.01), and the dry-wet weight of yolk and energy of saled native eggs and rural free-ranging chicken eggs were significantly higher than that of fresh eggs (P〈0.01). While the content of testosterone and dihydrotestosterone in yolk of rural free-ranging chicken eggs was significantly less than that of saled native eggs and fresh eggs, no significant differences of estradiol content in yolk was observed among the three varieties eggs (P=0.145).
