Adding DHA into Milk by Pre-emulsion Technology

Abstract: DHA (doeosa hexaenoic acid), as one of important polyunsaturated fatty acids, plays an important role in the prevention and treatment of a variety of human diseases. However, because the oxidation of DHA at RT is easy, the now applied methods and technologies of adding DHA into milk need expensive equipment and raw materials as well as high-level production processes, causing great risk of production and increasing production costs. This paper mainly presents the possibility of adding DHA into milk by the simple pre-emulsion technology.
