The Current Situation of Artichoke and its Development Prospect

Abstract: Jerusalem artichoke is one of multiple physiological functions of the natural green food,with valuable developing future.The powder and inulin of Jerusalem artichoke is widely used as food ingredients,especially in dairy products.The paper summarized Jerusalem artichoke's status and development prospect for the reference of researches and developing on health food industry related Jerusalem artichoke in Inner Mongolia.
