摘要: 通过介绍鱼卵中cystatin超家族成员的结构、分类、功能及抑制机理,进一步探讨了cystatin在卵中的作用。并对目前抑制剂在医药、食品等领域的应用作一阐述。

Abstract: The structure, classification, function and inhibition mechanism of the cystatin super family members in fish eggs were mainly introduced, and the role of cystatin in eggs was further explored. Applications of the protease inhibitors in aspects of medicine and food were summarized.
