Determination and Analysis of Progesterone and Other Hormones in Eggs

Abstract: The levels of progesterone, diethylstilbestrol, testosterone and methyl testosterone in fresh eggs, hatched eggs and chicken breast eggs were determined by ultra-high performance liquid chromatography tandem mass spectrometry (UPLC-MS/MS). And the level of progesterone was also analyzed. The results indicated that progesterone could be detected in all eggs, but its level varied largely and had no regularity in different individuals. The study provides the levels of progesterone in eggs and hatched eggs from different producing areas in China in order to provide reference for food safety.
