Comparison of Two Methods for Determination of Cholesterol of Duck Egg

Abstract: In order to evaluate the effect of the protein in egg yolk samples on the determination results of cholesterol in duck egg,direct kit method and indirect kit method were used to determine the cholesterol content of duck egg sold in market and the determination results of the two methods were compared. The results showed that there was significant correlation between the determined value of direct kit method and that of indirect kit method, and the determined value of direct kit method was higher than that of indirect kit method.
