Abstract: Acidity is one of the most important test items of fresh milk in recent years. The degree of acidity affects the freshnessof fresh milk directly, therefore it affects the quality of fresh milk. In this paper, the reason of the origin, normal range andabnormal acidity of fresh milk are summarized, and the preventive measures are given.
