Determination of Nitrite in Sausages by Spectrophotometry

Abstract: Through using N-( 1-naphthyl) ethylenediamine dihydroehloride as color-developing agent, we explorer the optimum conditions for determining nitrite content by spectrophotometry. Under the optimum condition, the linear range of nitrite content was in the range from 0.02 to 0.25 μg/mL, the recovery rate was 93.8 % with the variation coefficient of 7.9 %. This method applied to determination of nitrite in sausages has obtained satisfactory results.
