红景天保健饮品风味的研制

Study on the Flavor of Red Common Stonecrop Herb Health-care Drink

摘要: 利用正交试验方法对绵白糖、柠檬酸、料水比、温度、时间等用量及配比对红景天保健饮料品质的影响进行了研究,并筛选出最佳方案,即料水比为1:20,温度为100℃,时间为40min,糖酸比为6.0:0.2,可制得风味独特、口感良好的保健饮品。

Abstract: Main factors that influenced the quality of rhodiola health beverage were determined by orthogonal test.The regularilies that influence the quality of rhodiold health beverage were found out by studying the amount and ratio of materials. The optimum combination of technological parameters was 100℃,40min,20-fold water,6:0.2.The product has special nice flavour and high nutrition and healthy value.
