预乳化在牛乳中添加DHA的工艺研究

摘要: DHA作为多元不饱和脂肪酸系列中重要的一种。现已发现其对人类的许多疾病的治疗和预防有着重要的意义。但是由于DHA常温下易于氧化,目前在牛乳中添加DHA所采用的方法和工艺,不仅设备和原料价格昂贵,而且生产工艺要求高,给生产带来了极大的风险,同时也加大了生产成本。试验就是否可以通过预乳化这一简单的工艺将普通的DHA添加到牛乳中进行了研究。

Abstract: DHA (doeosa hexaenoic acid), as one of important polyunsaturated fatty acids, plays an important role in the prevention and treatment of a variety of human diseases. However, because the oxidation of DHA at RT is easy, the now applied methods and technologies of adding DHA into milk need expensive equipment and raw materials as well as high-level production processes, causing great risk of production and increasing production costs. This paper mainly presents the possibility of adding DHA into milk by the simple pre-emulsion technology.
