摘要: 酸度是近年来生鲜乳中的重要检测项目之一,酸度的高低直接影响生鲜乳的新鲜度,从而影响生鲜乳的品质。通过综述生鲜乳中酸度的来源、正常范围、酸度不正常的原因.提出了酸度异常的预防措施。

Abstract: Acidity is one of the most important test items of fresh milk in recent years. The degree of acidity affects the freshnessof fresh milk directly, therefore it affects the quality of fresh milk. In this paper, the reason of the origin, normal range andabnormal acidity of fresh milk are summarized, and the preventive measures are given.
