Determination of Physical and Chemical Indexes of Market Milk in Shihezi City, Xinjiang

Abstract: Physical and chemical indexes of 20 milk samples were determined by the authors in accordance with the methods described in the national standards GB 19644-2005 and GB 5410. And the determination was mainly focused on the acidity, protein content, fat content, nitrite content, and other indicators. The resuhs were analyzed and the quality was preliminarily evaluated. The determination results showed that the overall qualified rate of the 20 tested samples was 75 % in the four physical and chemical indexes, and the qualified rates of reconstituted milk acidity, fat content, protein conten4 and nitrite content were respectively 75 %,75 %, 50 %, and 100 %
