摘要:
番茄红素广泛存在于番茄、西瓜、葡萄柚等水果中,是成熟番茄中的主要色素,也是常见的类胡萝卜素之一,在所有类胡萝卜素中对单线态氧的猝灭活性最强。番茄红素具有抗氧化、抗炎、抗癌和预防心血管疾病的作用。番茄红素还可以作为饲料添加剂应用于动物生产中,具有提高免疫力、改善代谢和繁殖功能等作用。综述了番茄红素的作用机理及其在动物生产中的应用,以期为番茄红素作为饲料添加剂在动物生产中的应用提供参考。
